Ingredients
- 3 cups whole grain artesian bread stale cubed
- 2 tomatoes diced
- 2 cups avocado chopped
- 4 tsp red wine vinaigrette
- 2 Tbsp sunflower or pumpkin seeds roasted
Instructions
- In large bowl, mix together the bread, tomatoes, avocado and vinaigrette
- Sprinkle with roasted seeds of your choice and serve
- Pair with a wedge of cantaloupe
- Makes a great meatless entrée on a hot summer evening!
