Avocado Panzanella

Ingredients
  

  • 3 cups whole grain artesian bread stale cubed
  • 2 tomatoes diced
  • 2 cups avocado chopped
  • 4 tsp red wine vinaigrette
  • 2 Tbsp sunflower or pumpkin seeds roasted

Instructions
 

  • In large bowl, mix together the bread, tomatoes, avocado and vinaigrette
  • Sprinkle with roasted seeds of your choice and serve
  • Pair with a wedge of cantaloupe
  • Makes a great meatless entrĂ©e on a hot summer evening!
